Gluten Free RECIPE: Chocolate Matzah Toffee

Do you love chocolate? Then you MUST try this gluten free chocolate toffee, it’s perfect to celebrate Passover with gluten free matzah or any day with gluten free crackers. These six easy steps will walk you through how to make your gluten free treat in less than 20 minutes. You can make this for a holiday or ANY day with any type of gluten free salted cracker.

Ingredients:

  • 1 cup brown sugar

  • 1.5 sticks (3/4 cup) of butter

  • semi-sweet chocolate chips

  • chopped walnuts or pecans

  • Gluten free matzah/matzo (or thin gluten free plain crackers) - enough to cover two cookie sheets

What else you need:

  • Oven

  • Cookie sheet(s)

  • aluminum foil

Steps to make gluten free chocolate matzah toffee:

1. Cover cookie sheet with foil and put gluten free matzah (or crackers) on top.

2. Make toffee by combining 1 cup of brown sugar and 1.5 sticks of butter. Stir until bubbling on high heat until toffee covers spoon with thick layer.

3. Spread toffee over matzah then bake in oven at 450 degrees until bubbling.

4. Take out matzah with brown sugar/toffee cover from oven and sprinkle chocolate chips generously. Turn oven down to 325 degrees and put matzah with chocolate chips covering for one minute. Pro tip - don’t overheat chips- otherwise they won’t spread (like half of mine). You can tell in my pictures the half that the chocolate chips melted and spread across the matzah and the chips that I overheated so they didn’t spread. 😂

5. Take out and spread chocolate across all matzah then sprinkle with nuts (I love crushed pecans or walnuts)

6. Enjoy! Refrigerate then break apart, store in fridge, and enjoy!

You can also change this recipe up by adding peanut butter, caramel, or anything that you like to pair with chocolate to the mix. If you don’t have brown sugar, then skip the toffee part and melt chocolate on top and drizzle whatever you want on top.
