Gluten Free RECIPE: Easy & amazing honey cornbread muffins

I’ll start this off with - I’ve never LOVED cornbread. I LOVE these honey cornbread muffins!

They are so easy to make and will make you continue to want more. They were all gone in a few minutes with my family - everyone loved them (even non-gluten free people). I used the Bow and Arrow certified gluten free cornmeal for these muffins.

Ingredients:

  • 1 cup of cornmeal (I used 1/2 cup of blue and 1/2 cup of yellow Bow and Arrow cornmeal to have some of each - but up to you!)

  • 1 cup of gluten free all purpose flour (I used Bobs Red Mill 1:1 gluten free flour blend)

  • 1 tbsp baking powder

  • 1/2 cup of sugar

  • 1 tsp of salt

  • 1 cup of milk

  • 2 large eggs

  • 1/2 cup of butter

  • 1/4 cup of honey

Steps:

  1. Mix together all of the wet ingredients in a bowl. Then add the dry ingredients in. If you would like to make multi-colored muffins, then mix everything except the cornmeal into the bowl and split the mixture into two bowls before adding in half blue cornmeal and half yellow cornmeal. If you are making all one color - add in all of the dry and wet ingredients together and mix.

  2. Preheat the oven to 400. Prepare muffin pans by spraying with cooking spray or adding in muffin liners in your pan. Pour in your batter into the muffin tin, filling each tin at about 50-75% full.

  3. Bake for 15 minutes or until light brown on the top.

  4. ENJOY!!
