Gluten Free RECIPE: Easy gluten free brownies... that are so good you can't tell they are gluten free.

I have always been a chocolate addict, because who doesn’t love chocolate!?

Chocolate mixed with nuts, caramel, peanut butter, it’s all delicious… so when I found out I had Celiac disease over 20 years ago, I had to find the perfect gluten free brownie recipe to feed my addiction. This is THE BEST gluten free brownie I’ve had. Still, to this day, I have regular (aka gluten-eating) friends/family not be able to tell that these brownies are GLUTEN FREE!! In fact, my brother (who can eat gluten) prefers these brownies to many other gluten-filled brownies… now, that’s saying something.

These brownies are super easy, don’t take much time, and you don’t need much to make them. So, if you’re new to baking or new to gluten free, don’t worry - I have everything you need here. I want to hear how it goes, comment below with pictures or how your brownies turned out! :)


Ingredients:

  • Unsweetened baking chocolate (we used one 4oz package of Bakers unsweetened baking chocolate)

  • 1 cup of gluten free flour (we use gluten free oat flour, but you can use a 1:1 blend as well)

  • 2 cups of sugar

  • 3 eggs

  • ¾ cup of butter (1.5 sticks)

  • 1 tsp gluten free vanilla

  • (optional) Walnuts or pecans chopped

  • (optional) peanut butter chips

What else you need:

  • oven

  • oven-safe pan (I used a 9x6in pyrex pan)

Steps to make gluten free brownies:

  1. Mix gluten free flour, sugar, eggs, and vanilla together in a bowl.

  2. Melt - in a microwaveable cup put the chocolate and butter together and microwave 30 seconds at a time, stirring in between, until everything is melted together and there are no clumps. After the butter and chocolate is melted, mix it together with the rest of the mix.

  3. Add - Once everything is mixed together evenly, add in the chopped nuts and/or peanut butter chips into the mix, or neither. Optional - you can also add peanut butter swirls on top by microwaving some peanut butter for 30 seconds and adding the drizzles onto the top of the pan.

  4. Pour everything into your pan, we used a 9x6in pan, but a 13x9in pan also works. Put it into the oven at 350 degrees for about 29 minutes, or until a knife comes in and out clean. 

  5. Enjoy! Take the brownie pan out of the oven and let cool before enjoying. And…. brownies are always better with ice cream - vanilla or chocolate, really they are all delicious!
